Some days, all you need is a comforting dinner that hits all the right notes—flavourful, satisfying, and super easy to make. Enter my favourite mix-and-match dinner: Chilli Paneer and Garlic Bread! Yes, I know it’s a mix of cuisines, but that’s just how I like it! (I love experimenting with food!)

This combination has become my go-to comfort meal, especially on days when I want something quick and delicious.
Chilli Paneer is such a crowd-pleaser, but this version takes minimal effort while still delivering maximum flavour. It’s a quick stir-fry with simple ingredients and a hint of spice.
- Heat a pan with a little oil and toss in the cubed onion, capsicum, green chillies and baby corn (optional, but I love adding it). Sauté for about 2-3 minutes until they’re slightly soft but still crunchy.
- Add the paneer cubes and stir gently so they don’t break. Sauté for another few minutes.
- Add soy sauce and Schezwan chutney to the mix. Toss everything together and cook for another 2-3 minutes until the flavours meld beautifully.
- That’s it—you’re done! Serve it hot and enjoy the spicy, tangy goodness.

What’s Chilli Paneer without a side of warm, cheesy garlic bread? Okay, maybe they’re not a traditional pairing, but trust me, they work so well together! The crispy bread with gooey mozzarella balances the spicy paneer perfectly.
- Preheat your oven to 180°C (or 350°F).
- Mix softened butter with the finely chopped garlic. Spread this mix of garlic and butter on slices of bread.
- Sprinkle mozzarella cheese on top of these buttered bread slices. Don’t be shy with the cheese!
- Pop the bread slices in the oven for 5-7 minutes, or until the cheese melts and turns a gorgeous golden-brown colour.
- Serve hot and enjoy the cheesy, garlicky perfection.


This meal for me is all about comfort. It’s a mix of Indian-Chinese and Italian cuisines, and honestly, that’s what makes it special. Who says you can’t mix and match your meals?
I also love how customizable this is. Not a fan of baby corn? Skip it. Want to make the garlic bread extra fancy? Add some chili flakes or oregano. You do you!
